Food Defense is receiving increased attention by FDA, USDA FSIS and customers as the food supply chain lengthens and almost always includes a global component. Whether it is an unhappy employee or the result of the global supply chain, the business reality is there are real opportunities for intentional harm both domestically and overseas which could put consumers at risk. The ability of food manufacturers to identify and mitigate the impact of intentional contamination that could compromise food safety is not only required as part of the Food Safety Modernization Act (FSMA), it also is a risk reduction proposition that makes good business sense to protect consumer health, increase the image of the company and maintain the value of its brands.
